Three Bean Chili
Ingredients:
3 tablespoons canola oil
2 medium onions, chopped
3 cloves of garlic, minced
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 16 oz can black beans
1 16 oz can pinto beans
1 16 oz can pink beans
1 28 oz can diced tomatoes, with liquid
1 16 oz can tomato sauce
2 Jalapeno peppers, seeded and minced
1 tablespoon chili powder
1 tablespoon chipotle chili powder
1 tablespoon unsweetened chili powder
1 tablespoon dried oregano
1 teaspoon cumin
salt and pepper
Method:
Heat the oil in a medium sized stock pot over medium heat. Add the onion and saute until slightly softened. Add the green, red and jalapeno peppers and saute until cooked and softened. Add the garlic and saute until fragrant but make sure the garlic does not burn. *Burnt garlic creates a bitter flavor* Add the spices and coat the vegetables. Add the tomatoes, the sauce and the beans and let simmer over low. The longer you simmer the chili the better it will taste. Left overs are even better the next day! Xo ENJOY
